Fresh Cranberry & Lime Cocktail

I rarely go all out for a specialty cocktail creation. I’m normally just a vodka, soda, and a bucket of limes kind of girl–however, I figured now was a better time than ever to make a festive cocktail for no occasion other than simply to drink it. This jolly beverage is a fresh cranberry and lime cocktail with a lime sugar rim. Have I mentioned I love lime?

Ingredients 
vodka
sparkling water
for the cranberry mixture:
2 cups fresh cranberries

2 cups water
2 limes
3/4 cup white granulated sugar

Directions
1. In a small saucepan, combine the cranberries, 1/2 cup of the sugar, the water, and the zest of 1 lime.
2. Simmer over medium heat until cranberries burst, about 8 minutes.

3. Meanwhile, add the remaining 1/4 cup of sugar and the peels of the other lime into a blender or food processor.

4. Blend at high speed until the lime zest is completely incorporated into the sugar. Set aside.

5. Once cranberry mixture is done, pour the hot liquid carefully into your blender or food processor.

6. Blend on high speed until mixture is smooth.

7. Strain cranberry mixture through a wire sieve. Place container in the refrigerator for at least an hour to cool. The longer the better.

8. After the mixture is cooled, assemble! Rub a wedge of lime around the rim of a martini glass and roll the rim of the glass in your lime sugar so it adheres all the way around.

9. Add 2 ounces of vodka and 6 ounces of the cooled cranberry mixture to a martini shaker with ice–shake until cold and pour into your glass.

10. Top off your cocktail with sparkling water.
